Home cooking - Greek Inspired Grilled Chicken

   Hey loves, so lately I've been cooking a lot more than I usually do. Actually more than I ever have to tell you the truth. I have never really been the cooking type, mostly because I was busy with school, and had the privilege of being able to eat out a lot. That ended up becoming a problem when I wanted to get in shape and really start being as healthy as possible. I was going to the gym regularly, I had no problem with pushing myself to wake up early and go running, or lift weights even... my problem was what I ate. Im sure most people who want to loose weight or get in shape share the same problem, since we live in a world where its more convenient to jump in the car and get some sort of fast food.

   Im here to tell you thou, It doest have to be that way. For me it has become so much fun to try out recipes at home, and start making healthy and delicious food! I am gaining more control over what I eat on a regular basis.


   I do live with just my sister (and Bella), before I had found it wasting to cook a huge meal just because we both end up not warming up the left overs afterwards. I thought things needed to change, not to mention I am in school full time and she's always busy, I have come to rely on warming up last nights dinner for lunch while in class.
   
   Tonight I came home around 6, had chicken sitting in the fridge and vegetables that needed to be cooked, so I thought I would try a new recipe, heres my take on: Greek Inspired Grilled chicken    


Make a separate skillet with vegetables of your choice, for my dish I choose to saute snap pea's, red peppers and a bit of crushed garlic. 
1 cup whole-milk Greek yogurt
1 lemon, juice and zest
2 teaspoons ground cumin
2 tablespoons coarsely chopped fresh dill
2 tablespoons coarsely chopped fresh mint leaves
3 garlic cloves, roughly chopped
1 teaspoon dried oregano
1 teaspoon sea salt
1 teaspoon freshly ground pepper
1 package of sliced, boneless-skinless chicken breast
Mix all the ingredients together and toss with the chicken. Let marinate for at least 15 minutes or for several hours in the fridge.
Once marinated grill over medium-high heat until cooked through or the chicken reaches an internal temperature of 165* – 170*F. 
Next combine your sauted vegetables, and chicken and you have a healthy meal under 400 calories a serving (high in protein and complex carbs).
